Creamy Chicken & Bacon Pasta

The delicious pasta dish really packs a flavour punch. An easy dish to whip up for dinner that will satisfy all the hungry tummies! Perfect for leftover lunches too!

Ingredients
  • 500 grams chicken breast, cut into 2 cm cubes
  • 250 grams streaky bacon, finely chopped
  • 1/2 tsp Man Grind
  • 2 tsp smoked paprika
  • 1 tbsp Italian Stallion
  • 1/2 tsp chili flakes
  • 1 tbsp olive oil
  • 2 cups corn kernels (I used frozen but you could use tinned corn, just drain it first)
  • 300 ml cream
  • 1/4 cup parmesan cheese, grated or powdered
  • 500 grams cooked pasta and half a cup of reserved pasta water (I used large shells)
  • Italian Parsley, chopped, to serve
Instructions
  1. Place your diced chicken in a bowl and add the oil, Man Grind, paprika, Italian Stallion, and child flakes. Mix and set aside while you cook the bacon.

  2. Take your large, shallow casserole dish and heat over a medium high heat. Add the bacon and cook off until cooked to your liking. My kids like theirs slightly crunchy! Once bacon is cooked, add corn and allow to brown off a little bit. The flavour from the bacon will infuse into the corn while you do this. Remove from the pan and set aside.

  3. Return the pan to the heat and turn heat to high. Once your pan is hot, add the chicken and brown. Add the cream and turn the heat to low. While the cream is bubbling, deglaze the bottom of the pan to get all the flavours off from cooking the chicken and bacon. Add the parmesan cheese and combine. Let the chicken simmer in the cream for a few minutes until cooked through and the cream has reduced.

  4. Take your cooked pasta and add to the dish with the chicken, bacon and corn. Toss to combine. Add a tablespoon of the pasta water to help bring the sauce and pasta together.

  5. Sprinkle over the chopped parsley and serve! Incredible on it's own or served with some garlic bread for some extra carbs 😉

    Do you need the smoked paprika? Could you leave it out?

    Hey Kylie, if you have standard ground paprika you could use that. The paprika is a big part of the taste of this meal. If you have man rub, that would really elevate the taste of you don’t have paprika 🙂

    Made this last night, such an easy delicious pasta. Didn’t like that child flakes were added in though 😉 lol.
