
Crispy Salmon or Chicken Rice Bites

Crispy little rice bites packed with salmon or chicken, loads of Poke Me furikake flavour and a sticky Sweet Sesh hot honey dipping sauce. Perfect for snacks, lunchboxes or drinks-and-nibbles situations. Great way to use up left over rice!
Ingredients
- 2 cups cold cooked short-grain or sushi rice
- 250 g salmon fillet or chicken breast, very finely chopped
- 2 tablespoons Pepper & Me Poke Me seasoning
- 2 tablespoon cream cheese
- 1 teaspoon Wok sauce or soy sauce
- 1 cup Pepper & Me Katsu Crumb or plain panko breadcrumbs
- 1 tablespoon Pepper & Me Poke Me seasoning extra
- Spritz oil for air frying
- Sweet Sesh Hot Honey Dipping Sauce
Directions
- Place the cold cooked rice, finely chopped salmon or chicken, Poke Me seasoning, cream cheese and wok sauce in a large bowl. Mix really well until the mixture becomes sticky and holds together.
- With damp hands, scoop out heaped tablespoons of the mixture and firmly shape into small balls or slightly flattened bites.
- Mix the Katsu Crumb or panko with the extra Poke Me seasoning in a shallow bowl. Roll each bite in the crumbs, pressing gently so they are generously coated.
- Arrange the bites in a single layer in the air fryer basket. Spritz well with oil and air fry at 200°C for 10–12 minutes, turning halfway, until golden and cooked through. Chicken bites may need an extra 2–3 minutes and must be completely cooked in the centre.
- To shallow fry, heat a generous layer of neutral oil in a frying pan over medium-high heat. Cook the bites for 2–3 minutes on each side until golden, crisp and cooked through. Drain on paper towels.
- Serve with Sweet Sesh for dippoing, or kewpie mayo and sesh oil

Notes
ADHD Version: Mix everything, roll into bites, crumb with seasoned Katsu Crumb, air fry until crunchy and dunk into Sweet Sesh hot honey mayo.
