Cobb Salad
Servings: 4
Ingredients
  • 500 g chicken breast
  • 2 tbsp Blow My Coals
  • 200 g streaky bacon
  • 4 eggs, hard boiled
  • 1 avocado
  • 1/2 cucumber
  • 1 punnet cherry tomatoes
  • 100 g feta or blue cheese
  • 1 large cos lettuce
  • oil for pan frying
Dressing
  • 1 tsp mustard
  • 1 tsp honey or sugar
  • 1/2 tsp Man Grind
  • 2 tbsp oil
  • 2 tbsp red wine vinegar
Instructions
  1. Rub chicken breast liberally with blow my coals 

    Preheat oven to 180C fan bake 

  2. Pan fry chicken in a drizzle of oil for about 2 minutes on each side

  3. Pop on a baking tray and bake for 10 minutes in the oven. Remove and allow to rest while you prep the other ingredients 

  4. Bake or fry the bacon until crisp and then chop into a small crumb 

  5. Slice or cube the chicken. 

  6. Half the cherry tomatoes, dice the cumcumber and avocado 

  7. Wash the cos lettuce and chop into strips about an inch wide 

  8. You can either make individual salads or use a large platter for one big one either way the presentation is the same 

  9. Lay a base of the lettuce and then arrange the chopped toppings in lines across the salad bowl. Line up the chicken, bacon, egg, avocado, cucumber and tomato and crumble the feta or blue cheese 

  10. Pour over some dressing just prior to serving
