Ingredients: 450 grams can of baby beetroot; 600 ml vegetable stock; 50 g butter ((can select your favourite P&M butter)); 1 onion ((pealed and finely chopped)); 2 garlic cloves ((crushed)); 250 grams arborio risotto rice; 2 tsp chopped fresh thyme leaves; 150 mls red wine; 2 Tbsp Cant - Beet - A - Root relish ((extra for serving)); 125 grams soft goats' cheese; 2 Tbsp olive oil ((to drizzle over the beetroot)); 75 grams walnuts, roughly chopped ((optional))
