
Breakfast Pie

Ingredients
- 8 eggs
- 250 g bacon
- 1 cup spinach
- 1 onion
- 3 cooked sausages
- ½ cup halved cherry tomatoes
- 1 teaspoon chipotle like salt
- 3 sheets flaky puff pastry
- 1 cup cheese
- frozen potato gems/hash bites
Directions
- Preheat oven to 180C Fan Bake
- Dice onion and bacon and cook off in a pan in a drizzle of oil until soften and lightly browned. Do the same with the sausage if uncooked
- Line a deep pie dish or casserole dish with the defrosted pastry, leaving a small over hang around the edge
- In a large bowl, combine eggs, bacon, onion, sausage, spinach, tomatoes, cheese and season with chipotle lime salt
- Pour into the lined pie dish
- Roughly fold the pastry edges over and then top with a layer of potato gems/hash nuggets
- Bake for about 45 minutes or until the filling is set

I have the same issue. Have to cook it almost twice as long but is a newish oven. Still so yummy though!!
