Breakfast Pie

Ingredients

  • 8 eggs
  • 250 g bacon
  • 1 cup spinach
  • 1 onion
  • 3 cooked sausages
  • ½ cup halved cherry tomatoes
  • 1 teaspoon chipotle like salt
  • 3 sheets flaky puff pastry
  • 1 cup cheese
  • frozen potato gems/hash bites

Instructions

  • Preheat oven to 180C Fan Bake 
  • Dice onion and bacon and cook off in a pan in a drizzle of oil until soften and lightly browned. Do the same with the sausage if uncooked 
  • Line a deep pie dish or casserole dish with the defrosted pastry, leaving a small over hang around the edge 
  • In a large bowl, combine eggs, bacon, onion, sausage, spinach, tomatoes, cheese and season with chipotle lime salt 
  • Pour into the lined pie dish 
  • Roughly fold the pastry edges over and then top with a layer of potato gems/hash nuggets 
  • Bake for about 45 minutes or until the filling is set
