Ingredients: 4 Large Barley Rusks (or hard rye rusks) (A toasted baguette also works ); 4 Ripe Tomatoes, Chopped; 150 g Feta Cheese or Mizithra (Crumbled); 1 Red Onion, Thinly Sliced; 3 Tbsp Capers; 1 Handful Kalamata Olives; 3 Tbsp Extra Virgin Olive Oil; 1 Tbsp Red Wine Vinegar or Fresh Lemon Juice; 1 Tsp Greek Oregano; Salt and Ground Black Pepper; Fresh parsley or Mint, Chopped (Optional )
