Breakfast Pie

Ingredients

  • 8 eggs
  • 250 g bacon
  • 1 cup spinach
  • 1 onion
  • 3 cooked sausages
  • 1/2 cup halved cherry tomatoes
  • 1 tsp chipotle like salt
  • 3 sheets flaky puff pastry
  • 1 cup cheese
  • frozen potato gems/hash bites

Instructions

  1. Preheat oven to 180C Fan Bake 

  2. Dice onion and bacon and cook off in a pan in a drizzle of oil until soften and lightly browned. Do the same with the sausage if uncooked 

  3. Line a deep pie dish or casserole dish with the defrosted pastry, leaving a small over hang around the edge 

  4. In a large bowl, combine eggs, bacon, onion, sausage, spinach, tomatoes, cheese and season with chipotle lime salt 

  5. Pour into the lined pie dish 

  6. Roughly fold the pastry edges over and then top with a layer of potato gems/hash nuggets 

  7. Bake for about 45 minutes or until the filling is set
